New Year, new attitude to food? You're not alone. Taking the events of 2010 as a starting point, the team at Delicious Magazine have compiled a list of trends set to take the culinary world by storm in 2011:
1. Meat out, vegetables in: Continuing the eat-less-meat approach supported by official organisations and celebrities alike, this year the vegetarian diet is set to become even more popular with the help of Sir Paul McCartney’s Meat Free Monday campaign.
2. Foraging: 2011 is going to be all about going back to our roots, metaphorically and literally. The shock rise in fame of NOMA's René Redzepi in 2010 has made foraging seem like not only a cheap, but also a hip, way to source local ingredients.
3. Cherry Juice: Packed with of antioxidants and health-benefiting qualities, cherry juice is predicted to replace pomegranate, acai berry and aloe vera as the new superfood-inspired drink of choice.
4. Urban gardening: Forget geraniums and petunias; in 2011 lettuce and tomatoes will be taking over as the inner-city plants of choice as foodies and urban farmers turn to window boxes and roof teraces to grow their own veg inspired by movements such as Vertical Veg.
5. Korean cuisine: If restaurants, rather than foraging, are more your thing, you might find yourself 'going for a Korean' this year. After the indulgent Mediterranean delicacies craze and Wholesome Scandinavian trend, Korean restaurants are on the rise with the help of highly sucessfull oriental restaurants, such as David Chang’s Momofuku in New York.
